Shukto Recipe. We Bongs; treat Shukto as a special dish and we have it on occasion like Marriage, Birthday etc. but as part of Lunch only. It's a Bengali Mixed vegetarian dish comprising of several veggies inclusive of Bitter Guard, Eggplant, Green Banana, Potato, Sweet potato, Drumsticks, White radish and Hyacinth Beans. Shukto is a traditional and popular Bengali dish made during festivals and special occasions like kitty party, potluck, buffet and on a family get-together.

Ingredients of Shukto Recipe
- You need 1 cup of bittergourd(2-3 inches length cut).
- You need 1/2 cup of dried lentil dumplings or badies.
- Prepare 1 cup of raw banana(sliced).
- It's 1 cup of brinjal/eggplant(sliced).
- It's 1/2 cup of raw papaya(sliced).
- You need 1/2 cup of radish(sliced).
- You need 1/2 cup of flat beans(sliced).
- It's 1/2 cup of potatoes(sliced).
- It's 1/4 cup of drumsticks(2-3 inches length cut).
- It's 1 of bay leaf.
- It's 1 of dry red chilli.
- It's 1 tsp of ghee/ clarified butter.
- You need 1 tbsp of mustard oil.
- It's 1 tsp of ginger paste.
- It's 1/2 tsp of sugar.
- It's To taste of Salt.
- Prepare 1 tsp of refined flour.
- Prepare 1/4 cup of milk.
- It's 1 tsp of mustard seeds paste.
- Prepare 1 tsp of panch phoran/ five spices masala.

Shukto Recipe instructions
- Panch phoran masala-dry roast the panch phoran or five spices & grind it to a fine powder..
- To begin with Sukto recipe,in a kadai heat mustard oil & fry the dried lentil dumplings or bodies until it turns light brown in colour..
- In the same oil fry the bitter gourd slices & keep aside..
- Then add the dry red chilli & bay leaf to the oil.Then add all the 2-3 inches length cut vegetables one by one..
- Cook for about 2 mints,add salt,sugar..
- Add ginger paste & stir well.Add the mustard seeds paste.Pour water. Cover & cook for 5 mints till the vegetables are well cooked..
- Then add the crispy bitter gourd slices & dry lentil dumplings/ badi.Let it cook about a minute..
- Now mix the flour with the milk & pour it into the vegetable gravy & mix well..
- Lastly add ghee & sprinkle the prepared ground bhaja panch phoran masala powder.Mix well & turn off the flame..
- Sukto is ready.Remove from gas & pour it into a serving plate..
- Serve the healthy Sukto with hot steamed rice..
